Padre The Shepherd is a carefully guided journey through wood and time. Beginning its maturation in ex-bourbon barrels for two years, the whisky gains balance and richness before being transferred to Hungarian oak barrels, where structure and spice are gently introduced. The final chapter takes place in ex-red wine barrels, lending added depth, complexity, and a subtle spiced, fruit-driven influence.
This multi-stage maturation creates a whisky with remarkable character - layered, expressive, and thoughtfully evolved at every stage. Bottled non-chill filtered, it preserves its natural texture and full flavour profile, offering a whisky that feels alive in the glass.
As with all Padre releases, The Shepherd is produced as part of our Standard Issue range, with each bottle expressing our hands-on approach to distilling. The Shepherd reveals layers of red fruit richness balanced by warmth, spice and polished oak.
Nose
Lush red orchard fruits - ripe plum, dark cherry and crushed grapes - rise from the glass, layered with velvety toffee, vanilla pod and polished oak. A gentle warmth hints at the richness to come.
Palate
Opulent and full-bodied, with a silky, oil-rich texture that envelops the palate. Compote of plum and red berries unfolds over toasted brioche, followed by notes of caramelised sugar and lightly charred marshmallow. Subtle spice from the Hungarian oak weaves through the sweetness, adding depth and structure.
Finish
The sweetness deepens before giving way to a long, warming crescendo of seasoned oak, soft baking spice and lingering red fruit. Elegant and persistent, it leaves a refined spice glow at the back of the tongue.
